Eggless Chocolate Orange Cake

Posted on 1:03 PM by

Many boring people eat to live. Rest of us, the exciting souls live to eat. Ot at least we make food as integral part of our lives as we possibly could. And our food blogs are just a means to support this never ending love. So true to this mission, I too find a reason to try, cook and bake at every possible instance that I can.

So you can very well understand the sadness looming in my heart, when for so long I didn't post anything new. Just that after coming back from the trip and a great deal of eating out, we were craving for some simple dal chawal. Though great comfort food, but hardly anything to post. And then Ashish had been travelling so much, that I didn't have anybody to cook for :(. That's why the action was missing.

Now as much pleasure I get from eating, the same happiness I derive from making for others. In fact much more. So ever since I had been baking, I was looking forward to the time when I can bake something for my parents and in laws. But unfortunately till now such a time hasn't come.

Firstly because it hasn't been too long since I started baking. And I visited India only for short busy durations. Secondly because the proper ovens and ingredients are missing at both my homes there, since nobody bakes. And thirdly but very important factor was that almost everybody out there doesn't eat eggs. So there goes all my cakes and brownies.

But then it would be such a shame on me if I would let such trivial stuff come in the way of some tasty treats. WIth this in mind, here started my search for good eggless recipes for  sweet baking. And when I saw this recipe and read the reviews, I knew I had to try. I adapted it slightly to make it chocolate orange cake - the classic combo.

Eggless Chocolate Orange Cake Recipe
Adapted from Divinetaste's recipe
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa powder
2 tsp baking powder
1 tsp baking soda/ sodium bicarbonate
1 tin/400gm sweetened condensed milk
150 gm unsalted butter melted
1 tsp vanilla

1/2 tsp orange essence
120 ml water, room temperature

30 ml fresh orange juice
1/2 tbsp orange zest (optional)

  • Preheat the oven at about 100 to 120 degrees centigrade.
  • Grease and line the bottom of a 9” round cake tin with parchment/butter paper. (I used loaf tin.)
  • In a mixing bowl, measure and mix flour, cocoa powder, baking powder and baking soda. Whisk together and then sieve once to make the mixture uniform.
  • Add condensed milk, melted butter, vanilla, orange juice, orange essence, orange zest (if using) and water.
  • Beat with an electric hand mixer or whisk until the mixture is uniform and smooth and there are no lumps. Do not over beat.
  • Pour the batter into the cake tin and bake in the centre of the oven for about an hour at 150 degree centigrade, or until the tester from the centre comes clean. (In my oven it was done in 50 mins.)
  • Remove from oven and cool on rack for 10 mins. Dust with icing sugar or cocoa powder or have plain.
  • Or dress it up with a chocolate ganache and sprinkles.
Note: Crack at the top could be because of using a different pan size I used or because of uneven heating. Not necessary that you will get it too. But nevertheless I simply kept it upside down while decorating, and got a pretty looking cake!

And I'm so glad to have tried this. Because with this first trial of eggless cake, I found my perfect solution to treat anyone who doesn't eat eggs. It was such a moist, soft, and chocolately cake that you can't stop at one slice. Yes its not an as light as the everyday coffee cake but makes for a nice treat for friends. As I did, by making this simple loaf little special with a chocolate ganache and some sprinkles. And served it with ice cream. Just perfect!

I'm so encouraged now to try more of eggless versions. If you any such a fool proof recipe, do let me know. And if it's a microwave version, then even better!!
